1. Motichoor Laddoo
Motichoor Laddoo


Ingredients:


  • 1 cup gram flour (besan)

  • 2 tbsp cow ghee

  • 1/4 cup honey

  • 1/4 tsp Himalayan pink salt

  • 2 tbsp cashews, chopped

  • 2 tbsp almonds, chopped

  • 2 tbsp raisins

  • 1/4 tsp cardamom powder

  • Coconut oil for frying


Instructions:


  • Mix the gram flour with water to make a smooth batter.

  • Heat coconut oil in a pan and pour the batter through a perforated spoon to make tiny boondis.

  • Fry until it's golden and crisp. Drain on paper towels.

  • In another pan, heat honey, and add salt and cardamom powder.

  • Add the fried boondis to the syrup and mix well.

  • Add ghee, cashews, almonds, and raisins to the mixture.

  • Let it cool slightly, then form into laddoos.

  • Allow the laddoos to set for an hour before serving.

2. Kaju Katli

  • 1 cup cashews

  • 1/2 cup honey

  • 1 tbsp ghee

  • 1/4 tsp Himalayan pink salt

  • 1/4 tsp cardamom powder

Instructions:


  • Grind the cashew into a fine powder.

  • In a pan, heat honey and salt until it reaches a one-string consistency.

  • Add the cashew powder and mix well.

  • Cook until the mixture becomes thick and leaves the sides of the pan.

  • Grease a plate with ghee and spread the mixture evenly.

  • 2 tbsp almonds, chopped


Instructions:


  • In a bowl, mix milk/milk powder, flour, baking soda, and salt.

  • Add ghee and mix until it forms a crumbly texture.

  • Gradually add water to make a soft dough.

  • Divide the dough into small balls and stuff each with a piece of cashew and almond.

  • Heat coconut oil in a pan and fry the balls until golden brown.

  • In another pan, heat the honey with a little water to make the syrup.

  • Soak the fried balls in the syrup for at least an hour before serving.

4. Sooji Halwa

  • 1 cup semolina (sooji)

  • 1/2 cup ghee

  • 1/2 cup jaggery

  • 1/4 tsp Himalayan pink salt

  • 2 cups water

  • 2 tbsp cashews, chopped

  • 2 tbsp almonds, chopped

  • 2 tbsp raisins

  • 1/4 tsp cardamom powder


Instructions:


  • Heat ghee in a pan and add the semolina.

  • Roast until golden brown and fragrant.

  • In another pan, dissolve jaggery in water and add Himalayan pink salt.

  • Gradually add the jaggery water to the roasted semolina, stirring continuously.

  • Add cardamom powder, cashews, almonds, and raisins.

  • Cook until the mixture is thick and starts leaving the sides of the pan.

  • Serve warm, garnished with extra nuts and raisins.

5. Coconut Ladoo

  • 2 cups grated coconut

  • 1 cup condensed milk

  • 2 tbsp ghee

  • 1/4 cup chopped almonds

  • 1/4 cup chopped cashews

  • 2 tbsp raisins

  • Pinch of Himalayan pink salt

  • 2 tbsp honey


Instructions:


  • In a pan, heat ghee and add the grated coconut. Sauté for 2-3 minutes until fragrant.
