Cashew Chocolate Cookies
Crafted with rice and barley flour, cocoa, cardamom, and natural ghee, these chocolate cashew cookies are a unique delicacy from India's baking history.
Ingredients
12 cups finely mixed organic castor sugar or normal sugar
1/2 cup of raw cashews
1 cup malted rye flour
honey, 3 tablespoons
1/2 cup plus 1 tablespoon of ghee
12 teaspoons powdered cardamom
2 tablespoons plus 1/4 cup cocoa powder
1/2 cup of rice flour
1/2 tsp. baking powder
Method:
Add cashews, a dash of salt, a half teaspoon of sugar, and a half teaspoon of cinnamon powder to a small pan that has been heated with ghee over low heat.
Mix well and toast until cashews just begin to turn brown. Take the food off the stove and let it cool.
Set aside 2 tablespoons of the chopped cashews for the cookie garnish. The remaining portion will be used to make chocolate cashew cookies.
Take 1⁄2 cup of ghee and gently warm it in a small pot to melt, not to boil. Add honey and combine thoroughly.
Mix sugar, rice flour, barley flour, cocoa powder, cardamom powder, and baking powder in a bowl. Use a spoon or your fingertips to stir in the heated sweetened ghee until a thick dough forms.
Stir the chopped cashews. To make the dough more rigid as you roll it out, form it into a wide rectangle, wrap it in plastic, and set it aside for 30 minutes.
Place on a cookie sheet that has been coated with baking parchment, a nonstick surface, or both and cut in equal pieces.
Bake for 20 minutes at 325 ℉/162 °C in a preheated oven. Once the cashews top have begun to become a light golden brown, the cookies are all set to melt your mouth & heart.

Choco Soufflés
Soufflés may appear to be a delicacy that is exclusively served in restaurants, but they are quite simple to create. Prepare them straight after the following supper and savor them while they're still warm.
Ingredients
200 ml full fat milk
100 gm jaggery powder
100 gm cooking dark chocolate
400 ml whipping cream
1 tsp gelatin
½ tsp instant coffee powder

Method:
In a bowl, take milk, instant coffee powder, and chocolate and stir it well. Once done, take 50 gm of jaggery powder and mix the combination well.
Boil the whole mixture and simmer till the entire quantities of jaggery and coffee powder have no lumps. Once done, remove from the stove and let the mixture cool.
Take ½ cup of hot water and add the gelatin. Mix it continuously till the entire gelatin has dissolved. Boil till it turns golden. Set it aside for cooling down.
Once cooled, mix the gelatin mixture and the chocolate mixture together. Now in a bowl, take the whipping cream and add the jaggery powder and stir till it is soft.
Now put the entire mixture in a bowl and refrigerate it for 6-7 hours. You can also do this overnight, depending on your preference.
Now your entire souffle is set. You can garnish it with various food options, one of the best ones being healthy seeds.
Chia Seed Pudding
Despite their current popularity, chia seeds have been around for a very long time. Chia seeds are also thought to be indigenous to Mexico and Central America. However, as early as 3500 BC, the Aztecs were the primary users. So without further ado, let's discover how to make this straightforward but nourishing meal.
Natural calcium, phosphorus, magnesium, fiber, and antioxidants are all abundant in chia seeds. Also, alpha-linolenic acid, sometimes known as "the plant omega-3," is a vital anti-inflammatory lipid abundant in chia seeds and a plentiful supply of critical fatty acids.
Method
In a bowl, mix chia seeds, milk, date syrup, and vanilla extract and mix them well together. Now add a pinch of salt (according to your taste and preference) and stir it continuously.

Ingredients
All-purpose flour, with additional for dusting, about 3/4 cup
A quarter cup of white quinoa (raw)
1 cup almond meal
One teaspoon of baking powder
1/2 teaspoon of ginger, ground
1 teaspoon of cinnamon, ground
0.5 teaspoons of baking soda
Kosher salt, half a teaspoon
plain full-fat yogurt, 1 cup
tiny raspberries and 1/3 cup of honey
1/fourth cup whole milk
Method:
Set 325°F/162 °C oven temperature and preheat it.
Dust a 12-cup muffin tin with flour and spray it lightly. Combine the quinoa, flour, baking powder, baking soda, cinnamon, salt, and ginger in a large bowl.
Combine milk, yogurt, and honey in a medium bowl. Raspberries should be then stirred in the same mixture.
Distribute the mixture among the muffin tin cups, and bake for 15 to 20 minutes, or until a toothpick inserted into the middle of a muffin comes out clean. After five minutes of cooling in the pan, move to a cooling rack to finish cooling.
